Terra Mädi is a new line of wines from Freixnet- known for their Spanish Cava production - now expanding into some of Mexico's ideal winegrowing territories including Quéteraro in central Mexico. Terra Mädi means Beloved Earth - Terra being the Catalan word for "earth" and Mädi the Otomí word for "loved" - an homage to the indiginuos peoples of Central Mexico. With their sparkling wines - Terra Mädi showcases a couple different traditional method
Arguably the most appreciated method for sparkling wine production in terms of quality, and at the same time it is also the most costly in terms of production. The most important facet of the traditional method is that the second fermentation that yields its signature bubbles happens inside the bottle. AKA Champagne Method.
