Rubén Díaz owns some of the best vineyards in the Gredos region, a mountain range west of Madrid, known for their high altitude (1200+ meters) and beautiful rocky steep slopes that are immensely mineral with decomposed granite and schist soils. His "Cebreros" is a skin-contact white wine made from Chasselas Doré, a grape more commonly seen in Switzerland, that's generally believed to have been brought to central Spain by pilgrims along the Camino de Santiago Pilgrimage route.
