Acid League launched as an experiment vinegar company, recently introducing Wine Proxies as a whole new category of beverage—not dealcoholized wine, but layered blends of juices, teas, spices, bitters, and more designed to pair with food and be enjoyed in your finest stemware. While some of their Proxies are meant to be directly analogous to wine, others are more experimental. All are designed to pair with food. "Sauvage" meshes the juice of unfermented Sauvignon Blanc, crisp apples with green spruce tips and spicy cedar, blazing a trail through an untouched evergreen forest in the early spring.
